Soba そば noodles are Japanese noodles made from wheat flour and buckwheat (the term Soba means buckwheat).
Sômen そうめん noodles are a dry, extremely thin and delicate white Japanese noodle produced from vermicelli-type wheat flour.
Clearspring has selected these soba sômen noodles produced by a family of small-scale Japanese producers: prepared from organic flour, they are slowly air-dried using a traditional method to achieve a concentrated and authentic flavour.
These sobas sômen are fine noodles made from semi-complete wheat flour and buckwheat: they can be used all year round in hot broth, fried or served cold with a dip or salad.
