These Gluten Free Soba Noodles そば are delicious, versatile wheat-free noodles with a rich, nutty buckwheat flavour : they are cknown as "Juwari Soba" in Japanese, meaning 100% soba, which is the origin of their light brown colour.
These Soba gluten-free Clearspring noodles produced by a family of Japanese artisans, are made from organic flour and then slowly air-dried using the traditional roll-and-cut method to achieve a concentrated, authentic flavour. Because buckwheat contains no gluten or binding agents, it takes a lot of time and skill to produce these hearty noodles . The grain is ground several times so that the noodles, though whole, have a deliciously soft texture that absorbs the flavours of the broth or dressings with which they are served.
Firm and smooth, these soba noodles are a source of protein, low in fat and with a very low salt content: nutritious and dietetic, they can be used all year round in hot broth, deep-fried or served cold with a dip or salad.
