Ponzu

Ponzu (ポン酢) is a Japanese seasoning made from soy sauce and citrus juices such as yuzu, lemon or sudachi.

Depending on the recipe, vinegar, sugar, kombu or dashi may also be added.

Ponzu is extremely versatile. It goes perfectly with red meats, cold tofu (hiyayakko), vegetables and salads. Ponzu is also used in Japanese fondues such as nabe and shabu shabu, and can be used as a tangy substitute for soy sauce.
