Soba noodles そば are Japanese noodles made from wheat flour and buckwheat (the term Soba means Buckwheat).
These Soba noodles contain yam, yamaimo 山芋, a natural binder, well known to be a health food, low in sodium, source of potassium and fiber.
Fine (2mm thick), soba noodles are widely eaten in Japan:
- Warm with 'tsuyu sauce, made of dashi, mirin and sweet soy sauce. It is a main ingredient insoup, or a side dish inwok with pork or chicken as well as seasonal vegetables.
- Cold, zarusoba are a Japanese classic because they are so convenient to prepare. Ideal in salads, drizzled with a Japanese dressing, they are delicious and refreshing for hot summer days!
