Traditional Japanese oba noodles with buckwheat flour
These sômen noodles come from the city of Banshu, a prefecture of Hyogô, which is known for the quality production of its noodles.
Soba noodles そば, 蕎麦 are Japanese noodles made from wheat flour and buckwheat (the term Soba means Buckwheat).
Soba noodles are thin (2mm thick) and are widely eaten in Japan, hot or cold with a 'tsuyu sauce, made of dashi, mirin and sweet soy sauce.
It is a main ingredient insoup, or as a side dish with pork or chicken. Ideal as a salad, drizzled with a Japanese dressing, for hot summer days!
