Soba noodles そば are Japanese noodles made from wheat flour and buckwheat (the term Soba means Buckwheat).
These noodles Maiko Soba contain sweet potato yamaimo 山芋 natural binder, well known to be a health food, low in sodium, source of potassium and fiber.
Fine (2mm thick), soba noodles are widely eaten in Japan:
- Warm with tsuyu sauce, made of dashi, mirin and sweet soy sauce. It is a main ingredient insoup, or a side dish inwok with pork or chicken as well as seasonal vegetables.
- Cold, zarusoba are a Japanese classic because they are so convenient to prepare. Ideal in salads, drizzled with a Japanese dressing, they are delicious and refreshing for hot summer days!
