Soba そば noodles are Japanese noodles made from wheat flour and buckwheat (the term Soba means buckwheat).
Appreciated for their extreme length and sustained firmness, these light-coloured sobas noodles are produced from sifted buckwheat flour sarashina さらしな of which only the core of the buckwheat seed has been preserved after polishing.
Soba noodles are widely eaten in Japan, hot or cold with a tsuyu sauce, composed of dashi, mirin and sweet soy sauce.
It is a main ingredient insoup, or a side dish with pork or chicken. Ideal as a salad, drizzled with a Japanese dressing, for hot summer days!
