Soba そば noodles are Japanese noodles made from wheat flour and buckwheat (the term Soba means buckwheat).
Soba noodles are widely eaten in Japan, hot (called Tsukimisoba) or cold (called Zarusoba), with a 'tsuyu sauce, made from dashi, mirin and sweet soy sauce.
It is a main ingredient in soup, or as a side dish with pork or chicken. Ideal as a salad, drizzled with a Japanese dressing, for hot summer days!
