Curry Bars and Curry Paste

Japanese curry roux, or rū (ルウ), is a concentrated preparation that provides the spices, texture and characteristic flavour of Japanese curry. It is most commonly sold as blocks that can be broken into pieces, but is also available as flakes or powder. Unlike ready-cooked curry, it allows you to make your own recipe and adjust the ingredients to your taste.

The resulting sauce is generally mild, rounded and thicker than an Indian or Thai curry. It is traditionally served with Japanese rice, onions, carrots and potatoes. Chicken, pork, beef, tofu or vegetables: everyone can prepare their curry as they prefer.

Start by cooking the vegetables and your chosen ingredients in a saucepan with water or stock. Once the vegetables are tender, add the pieces of curry roux away from the heat or over a low heat, then stir until completely dissolved. The sauce will thicken quickly; leave it to simmer for a few minutes, following the instructions for the product you have chosen.

Japanese curry roux is available in several levels of heat: mild, medium, hot and extra hot. A mild roux is a good choice for trying Japanese curry for the first time or preparing a family meal. Hotter versions have a more pronounced spiciness.
