Rice, Flour and Panko

In Japanese cooking, rice is both a side dish and the starting point of a meal. Japanese short-grain rice is used for sushi, onigiri and donburi, and is served with almost every meal.

Flours, starches and panko naturally complement this selection: rice flour or glutinous rice flour for baking and desserts, starches for thickening sauces, and panko breadcrumbs for fried dishes.

Kirimochi and rice-based products are used in soups, savoury dishes and desserts. They work just as well with Japanese curries and easy-to-prepare dishes as with everyday Japanese sauces.
