Gari shôga ?? is a condiment of Japanese origin, prepared from thinly sliced grated ginger and marinated in rice vinegar.

Clearspring has selected this organic ginger from a small producer in Japan who prepares it from tender young ginger roots, sliced thinly, briefly pressed with salt and then marinated in high quality rice vinegar and shiso leaves.

What makes it special? While the majority of sushi ginger in sushi bars and takeaway sushi packs contain sugar, colourings and cheap vinegar, this 100% natural ginger is made with no added sugar, no preservatives and no colourings as its naturally pink colour comes exclusively from red shiso leaves.

This Sushi Ginger stimulates the appetite and invigorates the taste buds with its fresh and pungent flavour,: it is so named because it is almost always served with sushi or sashimi, to cleanse the palate between bites.
