Rice vinegar aged in black vinegar
Rice vinegar is a very present seasoning in Japanese cuisine: since 1907 Tamanoi タマノイ has been producing a full range of it appreciated throughout Japan.
This Komezu Kinpai rice vinegar 米酢キンパイ has been aged for a long time: its lovely amber colour comes from the black whole-rice vinegar that is added to the vinegar for a smooth fermentation.
