Umesu is a Japanese seasoning with a lively character that is tangy, fruity and distinctly salty. Often described as plum vinegar, it is not actually a fermented vinegar: it is the juice naturally extracted from ume fruits during the production of umeboshi.
Some versions are also flavoured and coloured with red shiso leaves, which add vegetal and slightly spicy notes. More intense and saltier than a traditional Japanese vinegar, umesu should be used sparingly in dressings, marinades, sauces, vegetables, salads, tofu dishes and quick pickles.
It can also season rice, replace part of both the vinegar and salt in a recipe, or add an unusual acidity to a drink or certain cocktails.
As its flavour is already very salty, it is best to taste the preparation before adding any salt or soy sauce.
