Zosui

Zosui (雑炊) is a Japanese dish in which already-cooked rice simmers in broth until it becomes tender and absorbs its flavours. It is often prepared with dashi, then completed with vegetables, mushrooms, egg, chicken, fish or seafood. In Japan, zosui is also traditionally prepared at the end of a nabe meal: the rice is added to the remaining broth to make the most of the flavours concentrated during the cooking of the different ingredients.

It contains more broth and has a more cohesive texture than a donburi, but the grains generally remain more distinct than in rice porridge cooked for a long time. Zosui seasonings make it easy to prepare different versions, including crab, salmon, chicken or fugu. Simply combine them with rice and the indicated amount of water, then add beaten egg or a few vegetables if desired.

The result is also very different from chahan, in which the rice is stir-fried over high heat.
