Chirashizushi

Chirashizushi (散らし寿司), literally “scattered sushi”, is a simple and sociable way to serve sushi. Unlike nigiri or maki, the vinegared rice is presented in a large dish or individual bowls, then topped with freely arranged garnishes.

Depending on the region and family traditions, it may be topped with raw or cooked fish, prawns, Japanese omelette, seasoned vegetables, mushrooms or seaweed. Some variations, such as gomoku chirashizushi, mix vegetables and seasonings directly into the rice.

Ready-to-mix preparations bring the right balance of acidity, sweetness and umami to the rice before the chosen toppings are added. Easier to assemble than individual pieces of sushi, chirashizushi is equally suitable for an everyday meal or a festive table. Among Japanese rice dishes, it is very different from a topped donburi, stir-fried chahan or zosui simmered in broth.
