Appearing in Japan in the 7th century, then reserved for the nobility and samurai, miso 味噌 (pronounced misso) is an essential condiment in the daily cooking of the Japanese.
The Miso of the producer Hikari is produced in the region of Shinshu, prefecture of Nagano, renowned for its natural wealth (water, air, cool climate) and exclusively from the best natural ingredients. Behind the simplicity of its ingredients (fermented soybeans, rice or wheat, sea salt and water) lies a complex art comparable to that of cheese in the West.
This white miso(shiro miso) mild uses rice as a leavening agent (kome-miso): it is rich in protein and has multiple benefits on digestion, cholesterol and blood circulation, much appreciated by macrobiotic enthusiasts As miso contains a lot of salt, you have to be careful with the amount used.
Miso paste is used, for example, as a base for the famous Japanese miso soup, but also in the preparation of ramen noodles, marinades or desserts.
