Crafted according to traditional recipes with organic ingredients, this robust genmai miso with whole soybeans and whole grain rice, thus offers an optimal nutritional profile.

As this miso is a living product, made in different regions of Japan,its taste, colour and consistency vary slightly depending on climate and season : the skill and experience of the master brewer then judges when miso has reached its optimum maturity, from 6 months during a hot summer period in some prefectures to 18 months in colder regions.
