Shutaro HAYASHI is a fifth-generation tea farmer in the prefecture of Kagoshima, in the south of the Kyûshû peninsula. At the foot of the Kirishima mountains, 霧島 the Hayashi family cultivates in their family gardens surrounded by forests, species of tea trees, some of which are becoming increasingly rare in Japan. All of its production stems from a fully organic culture that knows how to meet the challenges arising from the demanding mode of work of an organic tea garden.
The leaves of this hôjicha tea were harvested during the summer and are then roasted: the infusion thus appears brown, even red.
This very fine organic Miyama Kirishima Hôjicha tea is characterised by its low caffeine content: it is perfect during meals and in the evening, the Japanese enjoy it cold on hot summer days.
