

Buckwheat soba noodles with Kishu ume plum
This variety of traditional soba noodles is made using pureed umé plums grown in Kishu, which give them their beautiful pink colour and the sweet and savoury flavours that are so popular!
The noodles are thin (2mm thick) and are widely eaten in Japan, hot or cold with a tsuyu sauce made from dashi, mirin and sweet soy sauce.
It is a main ingredient in soup, or a side dish with pork or chicken.
Ideal in salads, drizzled with a Japanese vinaigrette, for hot summer days!
