Sweet Soy Sauces
Amakuchi shôyu (甘口醤油) is a mild Japanese soy sauce with a sweeter note and rounder saltiness than classic shôyu. It is popular in several regions of Japan, where it naturally accompanies rice dishes, fish and everyday family recipes.
Its texture and rich flavour work particularly well in marinades, glazes and quick-cooked dishes. Use it to prepare yakitori skewers, season stir-fried vegetables, glaze meat or fish, or simply add flavour to a bowl of rice. It easily brings a caramelised note to a recipe, especially when added towards the end of cooking.
An amakuchi soy sauce is an ideal complement to a classic koikuchi soy sauce, which is better suited to versatile everyday use. For skewers, marinades and glazes, you can also browse our Japanese sauces and marinades.
