Mirin みりん (pronounced mi-ri-n) is traditionally a sweet alcoholic seasoning for Japanese cuisine, present in all Japanese kitchens in the same way as soy sauce, miso, rice vinegar or even sesame oil. Along with soy sauce and dashi, Mirin is recognised as one of the three essential tastes of ancient Japan.
This Hon Mirin 本みりん or true mirin, is a sweet, syrupy sake produced by fermenting glutinous rice: it helps to attenuate strong fish or meat smells, to allow sauce and flavours to penetrate into cooked food and prevent them from breaking down. Mirin provides a lacquered appearance and makes cooking food easier: it can also be used to add a sweet flavour to a sauce for example.
Indispensable to many recipes, Mirin is used to prepare yakitori or teriyaki sauce, in donburis, salads and even Japanese cakes.
