Yuzu ゆず柚子 is a citrus fruit native to China. Its colour varies from yellow to green, depending on its ripeness.
A delicioussweet-tart-umami citrus flavour, somewhere between grapefruit and mandarin.
A major ingredient in ponzu sauce (along with soy sauce). Or koshô, a paste combining yuzu and chilli.

In southern Japan, yuzu vinegar is used instead of rice vinegar or other cereal vinegars.
Yuzu juice is therefore called yuzu vinegar (as it appears on the product label).
This tasty juice is a blend of pressed yuzu juice and real dai dai mandarin juice.
It has a milder taste than 100% yuzu juice, with less of the bitterness characteristic of yuzu.
