Yuzu ゆず柚子 is a citrus fruit about 7cm in diameter grown in Japan that ranges in colour from yellow to green depending on its ripeness.
With flavours somewhere between grapefruit and tangerine, yuzu is often used as a seasoning.
Very fine yuzu flakes are obtained from yuzu zest: their taste and fragrance are powerful and subtle, without bitterness.

The yuzu in flakes is simple to use: just sprinkle the desired amount on a salad or with fish. It is also very easy to incorporate into sauces.
