Ponzu (ポン酢) is a Japanese seasoning that combines the acidity of citrus fruits with salty flavours rich in umami. Brighter than soy sauce alone, it enhances food without masking its flavour. Depending on the recipe, yuzu, lemon or a blend of several citrus fruits may be used to produce a more aromatic, tangy or complex profile.
Strictly speaking, ponzu refers to a clear seasoning made with citrus juice and vinegar.
The most common version today is ponzu shôyu (ポン酢醤油), which also contains Japanese soy sauce.
This distinction still exists, even though both preparations are generally referred to simply as “ponzu”.
Yuzu ponzu has a highly aromatic fragrance and a slight bitterness, while lemon provides a more direct acidity. Blends of several citrus fruits develop a more nuanced flavour. Rice vinegar, sugar, kombu or Japanese dashi may also be added to the recipe to round out its flavour.
In Japan, ponzu is traditionally served as a dipping sauce for hot pots such as nabe and shabu-shabu: ingredients cooked in the broth are dipped into a small dish of ponzu just before eating. Its acidity also works particularly well with cold tofu in hiyayakko, as well as vegetables, salads, mushrooms, grilled fish and meat.
A few spoonfuls are enough to season cold noodles, prepare a dressing with sesame oil or finish a stir-fried dish.
Ponzu can also be used for a short marinade, although its citrus fragrance is particularly expressive when added towards the end of preparation.
