This Kokumotus Su Rice and Grain Vinegar 穀物酢 is made by fermenting rice with grain alcohol on the Daiwa-cho Plateau in Mihara in Hiroshima Prefecture, which is famous for its naturally fresh waters and air quality.
It has a slight acidity (4. 2%) and its clean but light fragrance make it a vinegar appreciated for its sweet and mellow taste.
Indispensable in Japanese cooking, this Grain and Rice Vinegar from Otafuku of good quality is suitable for salad preparation, in fish marinade, meat marinade, for making pickled vegetables (tsukemono) and for seasoning sushi rice.
