This Rice and Grain Vinegar 穀物 (Japanese for grain) is a vinegar brewed with a well-balanced blend of wheat, sake lees, rice and corn.
Mizkan is the largest manufacturer of rice vinegar in Japan: this Mizkan Kokumotsu Vinegar is one of the best-selling vinegars in Japan and it is also the most popular brewed vinegar.
This vinegar is particularly suitable for salad preparation and for seasoning rice for sushi. It can also be used for marinating fish, meat and for making pickled vegetables (tsukemono).
