Umeboshi are salty, tangy plums, macerated for many months with salt: they turn pink when they come into contact with purple shiso leaves.
Very popular in Japan, these salty, tangy-tasting plums are enjoyed there from breakfast onwards as a topping to a simple bowl of white rice.
In addition to their original flavours, plums are a dietary condiment with multiple virtues recognised and appreciated by the Japanese: antiseptic, fortifying, mineralising, hangover remedy etc...!
Clearspring organic umeboshi plums are produced by a small producer, a passionate family from Wakayama, Japan's most famous ume fruit growing region.
Management of the orchard with centuries-old plum trees using rigorous organic methods, traditional production by successive macerations of the plums in barrels of salt and shiso leaves, slow sun-drying, and delicate pickling with lactic acid: each meticulous step forges the guarantee of offering authentic umeboshi plums from the land, with exceptional taste and quality.
