Sukiyaki is a recipe that was created when Western culture was introduced to Japan and became a huge fad: it is now the favourite dish of the Japanese for a special occasion.
It is a kind of fondue that consists of braising very thin slices of fatty beef in a flat-bottomed pot, and it is basted with a very aromatic sauce flavoured with mirin, sake, soy sauce and sugar. Then tofu, shiitake mushrooms and other vegetables are added and simmered. Finally the grilled meat is dipped in beaten raw egg as traditionally perpetuated and loved by the Japanese.
