The black mushroom with a white back (similar to the Judas ear) is a mushroom widely used in Asian cuisine, in soups or salads.

In Japan, where it is called Kirurage きくらげ, it has been an integral part of the culinary tradition for several centuries.

Do as the Japanese do: add it cut into Suraisu スライス strips to many dishes to contrast the colours and add a crunchy texture !
