The Miso from producer Hikari is produced in the Shinsu region, prefecture of Nagano, renowned for its natural riches (water, air, cool climate), exclusively from the finest natural ingredients.
His artisans offer you their range of Enjuku Koji Miso soup made with the famous traditional miso paste with organic soybeans, locally produced and cooked rice and which owes its tasty umami taste to several months of maturation in kôji, a natural ferment, and sea salt.
