Classical soy sauce, also known as koikuchi shoyu, is naturally fermented using defatted soybeans and a small proportion of wheat.

This Kikkoman Shôyu  特撰丸大豆しょうゆ soy sauce is versatile, with a rich, floral flavour that is rich in umami.

It is suitable for all types of dishes, both Western and Japanese: it can be used to accompany sushi, as a marinade or dressing and can also replace salt in soups and sauces.
