The very essence of Japanese cuisine is Dashi だ し : made from kombu seaweed and dried bonito, it is The Japanese fish fumet, that famous broth at the base of Japanese cuisine.
The shirodashi 白だし (lit. white broth) for the Japanese is a bit like our chicken broth: easy to use, it allows you to quickly prepare many dishes by giving them a slightly salty touch and an intense flavour.
This Shirodashi comes from the producer Ninben, renowned for the quality of its katsuobushi (dried bonito shavings) which it has been producing since 1699 in Tokyo in the Nihonbashi district: it is made using traditional techniques and a base of 4 varieties of tuna to which kelp harvested in Hokkaido has been added.
This concentrated liquid version of Ninben bonito broth allows you to enjoy instantly the nutritional and taste benefits of dashi in your Japanese soups and noodles, your shabu-shabu fondues, your Oden simmered dishes, your omelettes, your sauces and even the cooking of your vegetables: umami flavour for all your favourite dishes!
