Tsuyahime bright-core rice, grown and polished in Yamagata
The Tsuyahime variety of rice つや姫 is an exceptional rice, grown in the prefecture of Yamagata, one of Japan's premier rice-growing regions,neighbouring Niigata.
Tsuya means "shiny", and Hime "princess" because its careful polishing gives it its shine: its small, very white grains of rice with great sweetness have an airy, sticky texture when cooked, perfect for making sushi.
Kitoku Shinryo 木徳神糧 selected this renowned variety in Japan, which ranks among the highest of Japanese rices.
The thick sauce is made from a variety of rice that has been used for a variety of purposes.
