Tofu 豆腐 is to Japan what cheese is to France: a food appreciated and consumed by many connoisseurs of Japanese cuisine.
Tofu is low in fat and high in protein. It is a healthy, creamy and versatile food. It is also suitable for vegetarian and vegan diets as a meat substitute.
This silken tofu, Kinugoshi Dôfu 絹ごし豆腐, produced by Japan Basket /Satonoyuki is particularly creamy: its medium-firm texture makes it indispensable in desserts and savoury dishes: it can be pureed or cut into cubes.
This medium-firm silken tofu is produced in the prefecture of Shizuoka, using the finest soybeans and Mount Fuji mineral water: the soy milk is firmed using nigari (95% magnesium chloride), according to the traditional recipe.
