Sake brewer for several decades in Fushimi, south of Kyoto, Kizakura 黄桜 takes its name from the famous Japanese cherry tree with double and ... yellow flowers, a rarity much appreciated by the brewery's foundator.
The region's harsh climate during the winter season and the purity of the Fushi-Mizu's groundwater contribute to the making of quality sake.
This semi-dry sake, fermented at a low temperature (10°c) gives off rich, fruity aromas of banana and apple that go very well with sashimi, white-fleshed fish carpaccio and raw ham.
