Soba noodles そば are Japanese noodles made from wheat flour and buckwheat (the term Soba means buckwheat). These Soba noodles come from the village of Itsuki, near Kumamoto in the Kyûshû Peninsula, which is very famous for the quality of its buckwheat seeds and its changing climate that is conducive to buckwheat cultivation.

Soba noodles are widely eaten in Japan, hot or cold with a 'tsuyu sauce, made of dashi, mirin and sweet soy sauce.

It is a main ingredient in soup, or a side dish with pork or chicken. Ideal as a salad, drizzled with a Japanese dressing, for hot summer days!
