Organic Japanese agar agar seaweed flakes gelling agent
Plant-based agar agar (Kanten 寒天かんてん in Japanese) is an excellent alternative to gelatine for desserts, jams, jellies or aspic.
Clearspring's organic agar agar flakes are handcrafted in Japan : the best seaweed is selected and then naturally frozen outdoors over winter.
Nowadays, almost all commercial agar is made using sulphuric acid to dissolve the starches, as well as bleaching agents and softening chemical dyes to neutralise the colour and flavour of the sea plants. However, a few small artisan producers, such as the family who make Clearspring Agar Flakes, still use the traditional slow method.

Agar-agar seaweed (Gelidium and Gracilaria spp.)
Preparation advice:
1 heaped tablespoon for 240ml of liquid of your choice.
Sprinkle the flakes over the cold liquid in a saucepan.
Heat without stirring until boiling.
Boil gently (approx. 5 to 10 mins), stirring occasionally, until the flakes have completely dissolved.
Pour into a mould and leave to cool to gel.
