

This flour is specially designed for the preparation of gyoza dough, and more generally all frying doughs (râmen, noodles, wantons, shumai, etc...).
Gyôza is a raviole of Chinese origin consisting of a soft wheat flour dough filled and fried or steamed. Gyôza are very popular in Japan.
Traditionally, the gyôza is filled with a stuffing made of minced pork with garlic, spring onion, ginger and cabbage. Today, there are chicken gyozas, vegetable gyozas, shrimp gyozas, duck gyozas and even sweet versions filled with applesauce.
In their savoury version, gyozas are served with a sauce made from soy sauce, a little rice vinegar and spicy sesame oil. They can also be served with a ponzu sauce, whose citrus flavours are a perfect match for the deep-frying.
