Panko パン粉 is a typical Japanese breadcrumb and it differs from our Western breadcrumbs in many ways:
Produced from breadcrumbs, Panko breadcrumbs are less dense than breadcrumbs with crusts. It is also coarsely ground and its large flakes coat food less compactly than crumbs, allowing some of the oil or frying fat to drain away (rather than being absorbed).
The resulting breadcrumbs are less greasy, airier, lighter, crispier and crunchier than at home!
