The Niigata Ken San Koshihikari rice variety 新潟県産こしひかり is an exceptional rice, grown in the prefecture of Niigata, one of Japan's premier rice-growing regions.

Hikari means "light", this rice is regarded for its beauty and brilliance.

The small, firm grains of rice have an airy, sticky texture when cooked.
