Japanese mustards ? Alongside the well-greened wasabi mustard, karashi mustard offers its dark yellow colour similar to western mustard.

Made from brown mustard seeds, it offers its pronounced flavours truly pungent: in Japan, it is enjoyed as an accompaniment to natto fermented soybeans, tonkatsu fried pork, oden stew, nabe pots and karashi-nasu grilled aubergine dishes.
