Clearspring has selected the organically and biodynamically grown Mungo bean sprout or ryokutô-moyashi 緑豆もやし. Composed of 80-90% water, rich in many nutrients, proteins, calcium, vitamins and fiber, moyashi is an easy-to-use superfood.
Warm, moyashi goes wonderfully with vegetable stir-fries and accompanies grilled meat and fish: serve it as a garnish in your bowls of Japanese udon and râmen noodles, dip them in your soups at the last moment, and add them to your yakisoba stir-fry noodles.
