Shio kôji? A natural condiment produced from rice with the addition of a natural ferment, aspergillus oryzae, also used in the process of making sake and miso.
In the form of a white, salty semi-liquid paste (shio means salt), this traditional ingredient is very popular in Japan and is used there as a substitute for salt, for marinades before cooking and salad dressings.
Adopt the Shio kôji 塩麴 from Matsuya Miso and enhance the taste of your dishes with a subtle and healthy umami flavour!
