Kombu (or konbu), refers to a collection of brown, flat, edible seaweed of the kelp genus.

Kombu is primarily used in the preparation of dashi, of which it is one of the main ingredients. Dashi is a versatile broth used in sauces, soups or stews.

Thanks to its natural glutamate, kombu is also known to enhance the flavour of the foods it is prepared with and to facilitate the cooking of legumes (beans, etc. ..)
