Wholegrain rice is unprocessed rice: the brown colour of the grain comes from the outer layer of the grain which has not yet been removed. This is removed by milling when the outer layer is polished, leaving the grain white. This processed rice is then called white rice.

A superfood, brown rice is rich in dietary fibre and essential minerals, natural sources of goodness. In Japan, a balanced diet is strongly recommended, with a regular mix of white and brown rice: do as the Japanese do and give it a try! Brown rice is also very satiating, thanks to its richness in various ingredients needed for the body's daily healthy functioning.

Tips for preparing Genmai rice:

  • Rinse the rice in cold water, stirring firmly so that the grains rub together a little. This perforates the outer layer of the grain, allowing the water to enter the interior of the grain, which will then swell more easily.
  • Leave the rice to stand for 6 hours in cold water, preferably in the fridge.
  • The right amount of water for optimal cooking: 250ml of water for 150g of rice / 500ml for 300g / 750ml for 450g.
  • Place the rice in the cold water container of your choice: Pressure cooker (follow the recommended instructions, cook for 10 minutes and leave until the pressure drops and the pressure cooker cools down. Stainless steel container (cook for 10 mins, then leave the rice to stand for 10 mins under a lid).
