The most delicate leaves of the Oku Midori shrub variety are finely ground. The shrubs are shaded for two to three weeks with a light-tight cover (Kabuse). Haruyo and Shigeru Morimoto chose this variety of shrub because it produces a Matcha with an intense taste, with a slight Umami and at the same time very sweet.
