Dried and smoked bonito, or katsuobushi in Japanese, is one of the mainstays of Japanese cuisine. It is one of the ingredients in dashi, the broth that forms the basis of Japanese cuisine.
Katsuobushi is produced by smoking and then drying skipjack tuna, a member of the tuna family. The dried fish become hard blocks that are then grated into shavings of varying thickness, depending on how they are to be used.
Bonito powder, Katsuoko かつお粉, is produced from wild skipjack Katsuwonus pelamis, caught in the Indian Ocean and then prepared in Concarneau. The techniques and know-how imported from Japan, from the town of Makurazaki in Kagoshima, the Mecca of genuine Japanese katsuobushi production, enable us to offer dried bonito of the highest quality.
