At the very north of Japan, on the island of Hokkaido, each of the major cities (Sapporo, Hokadate and Asahikawa) has its own style of ramen noodles.
Sapporo is where Miso ramen 味噌ラーメンfirst appeared in the 1960s. The broth is made from tonkotsu (pork bones) and chicken: it is then seasoned with a miso sauce and often covered with oil so that it does not get cold in the harsh winters.
