For 400 years, Takesan has been producing pure local soy sauces near Kagawa on the island of Shikoku.
For its Kiriboshi soy sauce, its craftsmen have carefully selected whole soybeans, wheat and sun-dried salt, then brewed it naturally in cedar barrels for a year, before pressing it directly from the Moromi mash.
Their age-old methods have been preserved, giving it a unique colour and exceptional, pronounced koikuchi flavours.
