Yuzu ゆず柚子 is a citrus fruit native to China, about 7cm in diameter and ranging in colour from yellow to green depending on its ripeness.It has a delicious complex sweet-umami flavour, topped with a citrus note, somewhere between grapefruit and mandarin.

Yuzu juice is often used as a seasoning and especially to prepare ponzu sauce (with soy sauce) or kosho, a paste mixing yuzu and chilli. Refreshing in salads, it can be used to flavour everything from fish to cakes and will quickly become a must in your kitchen!
Yuzu juice adds a touch of originality to your drinks when added to sake or shochu or chilled, with ice.
